Chilled cheesecake requires basic ingredients and no fancy pans.
Cheesecake is a decadent dessert filled with rich creaminess. Many recipes call for fancy pans and require hours for mixing and baking. Making a cheesecake does not have to be that involved. Chilled cheesecake is a simpler alternative and tastes just as good as baked varieties. It only takes approximately 20 minutes to make, and you can garnish it with anything suiting your taste. You can use a store-bought graham cracker or cookie crust, but making one is relatively basic. The kids can even help you make this cheesecake version. Add this to my Recipe Box.
Instructions
Chilled Cheesecake Filling
1. Soften 12 oz. of cream cheese. Thaw 2 cups of a non-dairy whipped topping in the refrigerator.
2. Place the softened cream cheese into a medium-size mixing bowl.
3. Add ½ cup of granulated sugar and 1 tsp. of vanilla to the mixture.
4. Mix the ingredients together using a mixer set on medium speed. Mix until all the ingredients are blended together and creamy.
5. Add the thawed whipped topping to the cream cheese mixture. Gently fold together using a large spoon until blended.
6. Pour the cream cheese mixture into a prepared graham cracker crust. Refrigerate for approximately two hours, or until the cheesecake is firm. Top with your favorite topping, such as cherries, strawberries or pineapple.
Graham Cracker Crust
7. Add 1 ¼ cup of graham cracker crumbs to the pie pan you are using for the cheesecake.
8. Add ½ cup of finely ground pecans, ¼ cup of sugar and 6 tbsp. of melted butter to the graham cracker crumbs.
9. Mix the ingredients together using a fork or large spoon. Press the cracker mixture against the bottom and sides of the pie pan using the back of the spoon.
10. Refrigerate the graham cracker crust for 10 minutes, or while you are preparing the cheesecake filling. Fill the crust with the cheesecake mixture.
