Make Hawaiianthemed Vegetable Trays

Colorful vegetable skewer platters are a helpful addition to a luau.


Hawaiian luau-themed parties can be found all year long in various locations. Planning your menu is an important aspect of this kind of get-together. Adding a vegetable platter full of grilled vegetable skewers not only fits the theme, it also adds a nutritious, low-fat food choice to the table. You can prepare these skewers and grill them to meet the demands of your guests. Throw in a palm tree centerpiece and your tray is complete. Add this to my Recipe Box.


Instructions


Centerpiece


1. Wash and dry the serving tray you will be using.


2. Wash a carrot thoroughly. Hold the carrot vertically so the wider part is up and the pointy part down. Use a knife to cut small notches on all sides of the carrot.


3. Cut a green pepper in half and remove the seeds. Cut zig-zags into the cut edge of the green pepper.


4. Place the green pepper on the thinner end of the carrot and attach it in place with a toothpick.


5. Slice a baking potato width-wise. Cut a hole big enough for the carrot to fit into. Push the wide end of the carrot into the potato. You should now have a palm tree on an island to use for your vegetable tray centerpiece.


6. Place the centerpiece in the middle of your serving tray.

7. Soak your wooden skewers in water for at least an hour.


8. Choose a variety of different-colored vegetables for kabobs that you can arrange on the vegetable tray. Cherry tomatoes, baby onions and mushrooms are popular choices that are easy to work with. Red, yellow and green peppers are also colorful additions to vegetable kabobs.


9. Wash the vegetables thoroughly with cool water. Use a sharp knife to cut any vegetables that need to be reduced in size. You want the vegetables to be uniform in shape, approximately into 1-inch square cubes.


10. Push vegetables onto the pointed end of a skewer, sliding them down toward the opposite end. Leave about 2 inches at the bottom to use to hold the skewer. Alternate each vegetable to create a colorful pattern.


11. Plan to grill the kabobs right before or as the guests arrive. You can always save some for later to grill as needed. Preheat the grill at a medium temperature for about 10 minutes. Place the kabobs on the grill and allow them to cook for a few minutes on that side. Rotate each kabob so all sides get grilled.


12. Arrange the grilled skewers on the serving tray. Place small plates and napkins near the serving area.
