Any kind of fruit can make a great topping for smooth, creamy homemade cheesecake, but kiwis are especially delicious because the tartness of the kiwi is a delightful contrast to the sweetness of the cheesecake. It's easy to make and only requires a few minutes of time. Next time you make a cheesecake, give kiwi a try, and you won't be sorry. Add this to my Recipe Box.
Instructions
1. Place the kiwis on a cutting board and cut off each end with a sharp serrated knife.
2. Peel thin strips of skin off the kiwi from top to bottom, working around each kiwi. Make sure to remove all of the skin before proceeding.
3. Chop the kiwis into pieces until you have about 2 cups worth. Don't make the chunks too small, because they need to be large enough to withstand heating and stirring.
4. Place the pieces of kiwi in a small saucepan, and add just enough sugar to coat the fruit.
5. Turn the burner on medium and cook the kiwi for 5 to 7 minutes, stirring very carefully so the kiwi pieces don't mash or break down. Allow the fruit to cool before serving.
6. Cut the cooled cheesecake into serving-size pieces and place them on dessert plates.
7. Spoon a small amount of kiwi over each piece, and serve.
