Ideas For Chicken For A Dinner Party

Chicken is quick and versatile for a dinner party.


Preparing a meal for a dinner party can be tricky. You aren't always sure what everyone's favorite food is. Reduce stress by cooking chicken. Enchiladas Suizas


This dish packs all of the delicious flavor of enchiladas suizas or enchilada verde into an easy casserole. This works best for a casual supper with friends or family. Pour two turns of olive oil into a stove top pan and turn heat to high. As the oil begins to break up, add ground chicken. Break up chicken with a wooden spoon. Season with salt and pepper.


After chicken browns up, add one to two cloves of minced garlic and 2 cups of salsa verde. Stir contents. Finely chop a jalapeno, cleaning out the seeds, and drop into the pan. Stir. Add a cup of chicken or beef broth (whatever you have on hand). Reduce heat and allow contents to thicken.


Pour into a baking dish. Top with crushed tortilla chips and Monterrey Jack cheese. Pop in a 350 degree oven for about 15 minutes or until cheese bubbles. Keep an eye on the casserole when it goes in the oven, as temperatures vary and you want the cheese to be melted, not browned. Serve immediately. Serve with Spanish-style rice. Instead of placing ground chicken and contents into a baking dish, this concoction can be served in tortillas for enchilada verde-style tacos.


Sticky Chicken


Start with bone-in chicken with skin. Crush one to two cloves of garlic per chicken and rub raw chicken down. Season with salt and pepper. Place in frying pan on medium to high heat. Pour low sodium soy sauce over chicken. Slice lemon wedges and squeeze over chicken. Slice a few lemons into large discs and place in pan with chicken. Cover chicken with a top and allow to cook through. This will take anywhere from 30 to 45 minutes. Remove chicken when done and place on plate, pouring the soy sauce and lemon juice reduction over the chicken. Serve immediately. Serve with an Asian-infused salad.


Herb Chicken


Pour two turns of extra virgin olive oil into a large frying pan. Turn heat to medium to high. Rub boneless, skinless chicken breasts with a crushed garlic clove. Rub with dried thyme and rosemary, and sprinkle sea salt and coarse black pepper. When oil begins to break up, add chicken. Allow chicken to cook about 20 minutes on each side to get a golden color. Serve immediately. This can be served alongside pasta or a salad.
