Instructions
1. Slice and peel off the white membrane on the surface of the spare ribs with a sharp knife to allow for more contact between the meat and marinade.
2. Pat the entire surface of the ribs dry with paper towels before liberally applying your favorite rib rub or seasoning blend and coarse salt. Rub the spices into the surface of the meat to rough it up a little and work the seasonings in.
3. Lay the seasoned spare ribs into a long glass casserole dish and pour apple cider over the rack until they are submersed.
4. Seal the casserole dish with a sheet of plastic wrap and slide it into the refrigerator for an overnight rest.
5. Open the casserole dish after at least eight hours and use tongs to lift it from the marinade.
6. Pat the surface lightly with paper towel before apply more seasonings or spice rub. Rest the spare rib rack, covered by paper towels, for at least ten minutes before grilling to allow it to almost reach room temperature.
